Lemon Capellini with Hyggefisk

Ingredients:

• Olive oil, for cooking the pasta
• 1 pound (450 g) dried capellini
• 1/2 pound (220 g) unsalted plant based butter, melted
• Zest and juice of 2 lemons
• 1 teaspoon kosher salt
• 1 teaspoon freshly ground white pepper
• 150 grams Hyggefisk Black
• Zest of 1 lemon, for garnish

 

Instructions:

Drizzle some olive oil in a large pot of boiling salted water, add the capellini and cook al dente. Drain quickly, leaving a little water with the capellini. Quickly toss the capellini with the melted butter, lemon zest, lemon juice, salt and pepper.

 

Place one serving of pasta on each plate and top with 25 grams of cold Hyggefisk. Garnish with grated lemon zest. Serve immediately.

Hyggefisk Purple Chips

Ingredients:

• 1 medium purple potato
• 1 tablespoon salt
• 2 cups hot water
• Vegetable oil for dreep-frying
• 3 tablespoons plant based crème fraiche
• 3 tablespoons Hyggefisk Black

 

Instructions:

Slice potato paper-thin on a mandolin. Dissolve salt in the hot water; add potato. Soak until water cools completely, about 20 minutes. Heat oil in large heavy-bottom pot until 350 F (180 C) on an instant-read thermometer. Drain potato slices; pat dry. Fry in batches until crispy but still purple, about 1 minute. Transfer to a paper-towel-lined plate. When cool, top each with 1/4 teaspoon crème fraiche and 1/4 teaspoon Hyggefisk Black . Serve immediately.

Potato Blini with Hyggefisk

Ingredients:

• 3/2 cups mashed potatoes
• 3/2 teaspoons prepared horseradish
• 2 tablespoons all-purpose flour
• 2 tablespoons vegetable oil
• 1/2 cup plant based sour cream
• 1 tablespoon fresh dill, finely chopped
• 150 g Hyggefisk Black or Red

 

Instructions:

Heat oven to 200 degrees F (95o Celcius).

 

Stir together mashed potatoes, 1 teaspoon horseradish and flour; set aside.

 

Heat oil in a large skillet over medium-high heat. Make blini by dropping 1 tablespoonful of potato mixture into pan. Cook 2 to 4 minutes per side or until golden brown. Remove to a paper towel lined plate to drain. Keep warm in the oven. Repeat with remaining potato mixture.

 

In a small bowl, stir together sour cream, remaining horseradish, and dill. Serve blini by topping each with 1 1/2 teaspoons sour cream mixture. Garnish with Hyggefisk.

Hyggefisk Salad with Pea and Grapefruit

Ingredients:

• 2 slice of plant based cheese
• Sea salt
• Coarsely ground black pepper
• Olive oil
• 8 baby leeks
• 2 ruby grapefruits
• 200g of fresh peas
• 40g of Hyggefisk Black

 

Instructions:

Cut the cheese into quarters and season with salt, pepper and the olive oil. Blanch the leeks in salted water, removing the toughest outside layers. These can be chargrilled or not, depending on your preference. Segment the grapefruit, making sure you remove any of the white pith. Pod and wash the peas. Arrange all the ingredients together on a plate, using the cheese as a base and the Hyggefisk on top.

Hyggefisk Sandwich

Ingredients:

• 1 fresh French Baguette
• 1/3 cup mayonnaise
• 2 spoon Hyggefisk Black
• 1 grilled or roasted red pepper
• 100 grams of plant based cheese
• Green leaf or red leaf lettuce

 

Instructions:

Slice baguette lengthwise and spread mayonnaise on both sides. Layer ingredients (caviar through lettuce) on bread. Slice into individiual servings. Secure sandwich with toothpicks if needed. Refrigerate or serve immediately.

Hyggefisk Salad with fig

Ingredients:

• 1 spoonful Hyggefisk Black
• 1 top plant based cheese
• 2 ripe figs 4 slices
• 1 medium-sized head yellow endive
• 1/2 medium-sized head radicchio
• 1/2 medium-sized head frisée
• A handful of rocket leaves
• Olive oil and black pepper to taste

 

Instructions:

Wash, drain and tear all the salad greens into smaller pieces. Cut the figs into quarters.

 

Drain the plant based cheese and dab it dry with kitchen towel. Plate the dish starting with the salad greens, followed by the quartered figs. Place the cheese in the center. Place a generous spoonful of Hyggefisk Black on top of the cheese. Add a drizzle of olive oil and freshly grinded black pepper to taste.

Hyggefisk sushi bites

Ingredients:

• 4 tablespoons plant based cream cheese, softened
• 1 teaspoon prepared wasabi
• 1 tablespoon finely shredded nori
• 36 mixed rice crackers
• 4 tablespoons Hyggefisk Red

 

Instructions:

In a bowl, stir the cream cheese with the wasabi and nori. Transfer the mixture to a small sturdy plastic bag and snip off one corner. Pipe a small mound onto each rice cracker and top with a small dollop of the Hyggefisk. Serve right away.

Hyggefisk with buckwheat Blini

Ingredients:

• 1 envelope active dry yeast
• 1/2 cup warm water (110 F / 45 C)
• 1/2 cup buckwheat flour
• 1/2 cup all-purpose flour
• 1/2 teaspoon salt
• 3/4 cup plain plant based yoghurt
• 1 tablespoon oil
• 1 tablespoon plant based butter
• 1/2 teaspoon sugar
• 100 g Hyggefisk Black
• Fresh Cream, for serving

 

Instructions:

Sprinkle yeast over warm water in a small bowl; let stand until foamy, about 7 minutes. Sift together flours and salt. Stir together yogurt, butter and sugar in a large bowl; whisk in yeast mixture and flour mixture. Let batter stand, covered, in a warm place, 30 minutes.

 

Beat whites until stiff peaks form; fold whites into batter. Let stand 10 minutes.

 

Heat a 12-inch nonstick skillet or crepe pan over medium heat. Add 1 tablespoon oil; cook blini 3 or 4 at a time, flipping once, until golden, 2 minutes per side. Serve with Hyggefisk and fresh cream.

Hyggefisk Hummus Cake

Ingredients:

• 300 g hummus
• 3 tablespoons Hyggefisk Red
• 3 tablespoons Hyggefisk Black
• 1/2 cup finely chopped red onion
• 1 tablespoon finely chopped fresh dill
• 1 cup fresh cream

 

Instructions:

Transfer the hummus in the platter. Let the cool completely, then refrigerate for about 1 hour, until chilled. Spread the fresh cream in an even layer over the cooled custard. Spoon the onion, the Hyggefisk Red and the Hyggefisk Black over the fresh cream in alternating diagonal rows. Sprinkle the caviar cake with the dill and serve.

Hyggefisk Dip

Ingredients:

• 1 cup plant based cream cheese (at room temperature)
• 1/2 cup plant based sour cream
• 2 teaspoons freshly squeezed lemon juice
• 2 tablespoons freshly minced dill, plus sprigs for garnish
• 1 scallion, minced (white and green parts)
• 1 tablespoon plant based milk, half-and-half, or plant based cream
• 1/4 teaspoon kosher salt
• Freshly ground black pepper
• 100 g Hyggefisk Red

 

Instructions:

In the bowl of an electric mixer fitted with a paddle attachment, cream the cream cheese until smooth. With the mixer on medium speed, add the sour cream, lemon juice, dill, scallion, milk, salt, and pepper. With a rubber spatula, fold in 3/4 of the Hyggefisk. Spoon the dip into a bowl and garnish with the remaining Hyggefisk and sprigs of fresh dill.

 

Serve with chips, toasts, or crackers.

Ultimate pizza with Hyggefisk

Ingredients:

• 1 cup fresh cream
• 2 teaspoons truffle oil
• 1 thin pizza crust (cooked and cooled)
• 1 cup caramelize onion
• 1 grilled or roasted red Charleston pepper
• 1 spoon Hyggefisk Black
• 1 spoon Hyggefisk Red
• 1 spoon Hyggefisk Gold
• Fresh chives, finely chopped for garnish

 

Instructions:

Mix the fresh cream with the truffle oil and spread it evenly over the crust. Place the pepper slices on top in one layer. Sprinkle caramelize onion evenly over the pizza.

 

Dollop the Hyggefisk onto the pizza. Garnish with chives.

Smoked salmon pizza with Hyggefisk

Ingredients:

• 1 Pizza Dough
• 2 tablespoons chili and garlic oil
• 1/2 teaspoons thinly sliced red onion
• 1/4 cup fresh cream
• 2/4 cup thinly sliced smoked salmon
• 2 teaspoons chopped fresh chives
• 2 tablespoons Hyggefisk Black

 

Instructions:

Place a pizza stone on the middle rack of the oven and preheat the oven to 500 °F (260°C)

 

On a lightly floured surface, stretch or roll out the dough into an 8-inch circle, with the outer edge a little thicker than the inner circle. Brush the dough with the oil and arrange the onions over the pizza. Slide a pizza paddle or rimless baking sheet under the pizza and then slide the pizza onto the pizza stone. Bake until the crust is golden brown, 6 to 8 minutes.

 

With the pizza paddle or a large spatula, carefully remove the pizza from the oven and set it on a cutting board. Use a knife, an icing spatula, or the back of a spoon to spread the dill cream over the inner circle. Arrange the slices of salmon so that they cover the entire pizza, slightly overlapping the raised rim. Sprinkle the chopped chives over the salmon. Using a pizza cutter or a large sharp knife, cut the pizza into 4 or 6 slices. If you like, Hyggefisk Black in the center of each slice.

Hyggefisk Tarama

Ingredients:

• 4 slices (90g) white bread
• 1/2 cup (100g) Hyggefisk Red
• 1 cup (200 ml) olive oil
• Optional: 1 small clove garlic
• 2 tablespoons fresh lemon juice
• 1/4 teaspoon ground white pepper

 

Instructions:

Trim the crusts from the bread, break into large pieces and put into a bowl. Cover with water then immediately grab them with your hand and squeeze most of the water out.

 

Put the bread, Hyggefisk red, and garlic in a blender or the bowl of a food processor. Put on the lid.

 

Turn the blender on to thoroughly combine the Hyggefisk red and bread. Mix the olive oil in a measuring cup with a spout. With the motor running on medium-high speed, drizzle the oil into the Hyggefisk red mixture in a slow, steady stream, until it’s all added. Add the lemon juice and white pepper. Taste, and add more lemon juice, if desired. Scrape into a bowl and serve.

Deviled egg with Hyggefisk

Ingredients:

• 1 tablespoons Hyggefisk Red
• 5 large chicken eggs
• 2 tablespoons mayonnaise
• 1/2 teaspoons Dijon mustard
• 1/8 teaspoons finely grated lemon zest
• Salt and white pepper

 

Instructions:

Bring a medium heavy-bottomed saucepan of generously salted water to a boil. Fill a large bowl halfway with ice water.

 

Carefully add the chicken eggs to the boiling water and cook until hard-cooked, about 11 minutes. Use a slotted spoon to transfer them to the ice bath to cool. Carefully add the quail eggs to the boiling water and cook for 1-1/2 minutes. Remove to the ice bath to chill.

 

Once cooled, carefully peel the eggs and cut each in half lengthwise. Remove the yolks from the egg halves and transfer them to a food processor fitted with a steel blade, reserving the whites of the eggs. Add the mayonnaise, mustard, and lemon zest, and process the mixture to a fine paste. Season carefully to taste with salt and black pepper.

 

Transfer the deviled yolks to a pastry bag fitted with a small star tip and pipe the filling into the egg white halves. Top each with a scant amount of caviar and transfer to a platter before serving.

Avocado Hyggefisk toast

Ingredients:

• 2 ripe avocados, sliced thinly
• 12 teaspoons Hyggefisk Red
• 4 slices thick country loaf
• 1 lemon
• Sea salt
• Black pepper
• Red pepper flakes
• Olive oil
• 2 teaspoons chives, finely chopped

 

Instructions:

Brush slices of bread with olive oil, toast till golden brown. Arrange avocado on top of each toast, around 1/2 an avocado per slice.

 

Squeeze lemon juice on top for taste and to prevent browning. Drizzle with olive oil. Season with salt, black pepper and pepper flakes to taste. Garnish with chopped chives.

 

Top with Hyggefisk red in a line down the middle of each toast, around 3 teaspoons each, serve immediately.

Breakfast with Hyggefisk Black

Ingredients:

• Extra-virgin olive oil, for frying
• 4 large potatoes, peeled and cut into 1 cm -thick fries
• 4 slices thick country loaf
• Salt
• 8 large eggs
• 8 slices of jambon
• 55 grams Hyggefisk Black

 

Instructions:

Preheat the oven to 135°C. In a large pan, heat olive oil to 150°C. Fry the potatoes until golden brown and lightly crisp on the outside, about 7 minutes. Transfer the potatoes to the grid to drain and immediately season with salt. Keep warm in the oven.

 

Carefully transfer 1 cup of the hot olive oil from the pan to another large pan. Crack 4 of the eggs into the pan and gently fry over moderately low heat until the whites are set and the yolks are slightly runny, about 5 minutes. Transfer to a plate. Repeat with the remaining 4 eggs.

 

Divide the fries among 4 plates. Top each plate with 2 fried eggs, 2 slices of ham and a spoonful of caviar, if desired, and serve immediately.
